Japanese Chanko Nabe (Sumo Wrestler’s Hot pot)

hanko Nabe is also known as Japanese Sumo Hot Pot. Sumo wrestlers in Japan often eat this Chanko hot pot with a lot of ingredients put into the hot pot. However, this hot pot dish does not make us “obese”, but on the contrary, it is very healthy with many nutritional sources from meat, seafood, and vegetables. Let’s make a typical Sumo Chanko Nabe hot pot with Dashi Lab that is nutritious and easy to make for everyone!

  • 300g Chicken thigh                                 
  • 200g Shrimp                                         
  • 100g Konjac       
  • 100g Chicneese cabbage                                  
  • 100g Tofu                                    
  • 50g Chrysanthemum                                         
  • 50g Reishi mushroom                          
  • 50g Enoki mushroom                       
  • 30g Leek                            
  • 30g Shiitake mushroom                          
  • 10g Carrot                                       
  • 100g Premium Happo Dashi        
  • 1000 ml Water                                        
  • 100g Rice                                     
  • 1 pc Egg                               
  • A little Roasted sesame                                 
  • A little Greem Onion                              


  1. Cut ingredients into bite-sized pieces
  2. Place the ingredients in the pot one by one
  3.  Making hot pot broth: mix Happo Dashi broth with water in the ratio (1:10)
  4.  Put the broth into the pot, cover and bring to a boil
  5. When you see steam coming out, reduce the heat and bring to a gentle boil until ingredients are evenly cooked
  6. Serve in a bowl and enjoy the hot pot
  7. After eating, there is only hot pot with sweetness created by the ingredients, put the rice in the hot pot and cook for a bit more until the rice is really soft, then beat the eggs and slowly stir in the pot, Close the lid and wait 1-2 minutes for the broth to soak into the rice, open the lid, sprinkle some sesame, spring onions on top and enjoy.


  • Konjac jelly should be briefly boiled in boiling water to reduce the smell of ingredients.
  • During the cooking process or even while enjoying the hot pot, if the broth runs out, you can add more broth to the pot to stabilize the flavor.
