Japanese Steamed Egg Chawanmushi

Chawanmushi Japanese Steamed Eggs are hot, fluffy, soft, and melt in the mouth that is pleasing for both adults and children!

Dashi Lab will introduce to you a nutritious Japanese steamed egg Chawamushi with chicken eggs, shrimp, shiitake mushrooms, lotus seeds, etc., with a super simple method that is not easy to fail. 😋


(For 2 people)

1) Steamed Egg

  • Egg                           2 quả
  • Shrimp                                   30g
  • Shiitake mushroom                     10g
  • Crab stick                         10g
  • Lotus seed                               10g
  • Water                                   270ml
  • Premium Shira Dashi    20-30g

2) Sauce

  • Potato starch               5g
  • Water                                 125ml
  • Premium Shira Dashi      30g


  • Steamed Egg: Peal shrimp. Chop shiitake mushrooms, crab sticks
  1. Mix eggs with 270 ml of water and 20-30gShira Dashi
  2. Shrimp: peel, remove shrimp thread, slit the back and abdomen, use your hands to straighten the shrimp
  3. Put shrimp, shiitake mushrooms, lotus seeds, and crab sticks in a bowl, then slowly pour in the egg mixture
  4. Put it into a pot of boiling water, steam it on high heat for 3 minutes, on low heat for 10 minutes phút
  • Sauce: Mix potato starch in 5ml of water
  1. Put 120ml of water and 30g of Shira Dashi in a pot, bring to a boil
  2. Slowly add the potato starch mixture to the pot and stir well
  3. Pour the sauce over the steamed eggs and enjoy


  • Filter the egg mixture through a sieve will help the eggs have a smooth texture and won’t get honeycomb texture after steaming.
  • When steaming eggs, you should open the lid slightly, this will help you easily adjust the temperature to your liking.
